Ingredients
- 3 Tbsp of Unsalted Butter
- 1 Broccoli Crown (Head)
- 1/2 Small Sweet Onion, diced
- 2 Tbsp Flour
- 2 cups of Chicken Stock (or veggie stock)
- 1/2 cup of Heavy Cream
- 1 cup of Shredded Cheddar / Jack Cheese Blend
- 1/4 tsp Garlic Powder
- Salt and Pepper, to taste
Preparation
1) Cut broccoli into bite size pieces and dice the onion.
2.) In a dutch oven or soup pot, melt butter over medium high heat. Saute your broccoli and onions for about 8 minutes until the onions start to become translucent.
3.) Lower heat to medium and stir in the flour for 1 minute until incorporated, add the stock, heavy cream, garlic powder and bring to a simmer and then turn heat to low and cook for 20 minutes, stirring occasionally, until the broccoli is cooked through and soup is thickened.
4.) Stir in the cheese until fully melted. Add salt and pepper to taste. Ladle into bowls and enjoy.
