This pasta salad has always been my favorite thing to eat at Ruby Tuesdays salad bar. Because I don’t think it’s a great idea I refined some other recipes I found for copy cat versions of it and made my own that is a pretty close substitute. My Aunt loves it and wanted me to give her a copy so while I was typing it out anyway I decided to share it here on my blog:
Pasta salad contains Green Peppers, Green Peas, Rotini Pasta, Mayo, Ranch Dressing, Salt Pepper and is very easy to make. You can adjust to your taste but these are the ingredients that I use:
Copycat Ruby Tuesday’s Pasta Salad Recipe
½ lb rotini pasta (half a box)
½ cup ranch dressing (preferred Ken’s)
¼ cup mayo
¼ tsp black pepper
½ green pepper chopped into cubes
3 slices deli ham cut into squares
½ cup frozen peas (cook 1.5 minutes in pasta water)
Salt to taste
- Start pasta in pot of boiling water and boil for 13.5 minutes
- Mix together mayo, ranch dressing, pepper, green pepper, ham in a mixing bowl.
- Have ½ cup frozen peas ready to add to your pasta when it reaches 13.5 minutes, then cook for an additional 1.5 minutes.
- Drain pasta and peas under cold water, and add to your mixture and salt the pasta.
- Mix to combine.
- Chill for at least 1hr before serving.
